Have you been eating the same five recipes I have posted on here? I'm so sorry! I keep meaning to post this recipe, as it has become our new favorite, so here it is.
2 boneless skinless chicken breasts (cut into chunks or not)
1 Tsp. Olive oil - optional
1 tsp. balsamic vinegar - optional - but don't you love the taste it?
1 can diced tomatoes with juice (with or without jalepenos)
1 cup spaghetti sauce - although tomato sauce & some spices (oregano, rosemary, and the like) taste good too.
1/2 cup salsa
1 tomato (if you have it)
1/2 to 1 cup cheese - we like mozzarella, but any kind is good and for us the more the better!
1 cup pasta - any kind
Put the chicken, tomatoes, spaghetti sauce, and salsa in a skillet, cover and simmer for 20 minutes. Meanwhile, cook your noodles. Check chicken, you can cut it into chunks at this point if you would like. Sprinkle cheese over chicken goulash and cover. Let sit for 2-3 minutes until cheese is melted. Put pasta in bowls, plates, or napkin and pour over the sauce and eat!
We call it chicken lasagna, or that's what we would call it if Jared didn't always call it "that tomato thing you make" Obviously this is easy to adjust for how many people you need. If your sauce is runny, add some flour, but just a little bit. This is super good with cheese toast or garlic toast.
P.S. Obviously this is a recipe I made up, so don't fault Betty Crocker if it doesn't taste good.
P.P.S. We've only ever made it with chicken, but I bet it would be good with other meats too. Or no meat!
